Overview of Ultra-Processed Foods

Ultra-processed foods have gained attention for their prevalence in modern diets, characterized by high levels of added sugars, saturated fats, salt, and artificial additives, while lacking essential nutrients. Epidemiological studies consistently link UPF consumption to increased risks of obesity, type 2 diabetes, and cardiovascular diseases.

The critical period of pregnancy and early childhood significantly influences the development of metabolism, immune function, and the gut microbiota, with implications for lifelong health. This review analyzed 84 publications, including original research and systematic reviews, to understand how maternal consumption of UPFs affects health outcomes.

Maternal Health and UPF Consumption Trends

The rise of UPFs has led to their widespread consumption globally. Foods like packaged snacks, sugary drinks, and ready-made meals now form a significant portion of many diets. Studies have shown that pregnant women with higher UPF intake tend to have poorer overall diet quality, reporting lower levels of protein, fiber, vitamins, and minerals, alongside increased intake of sodium and trans fats.

Evidence suggests that elevated UPF consumption during pregnancy correlates with excessive gestational weight gain, obesity, gestational diabetes, and various inflammatory markers. Additionally, emotional factors such as stress and anxiety during pregnancy have been linked to higher UPF consumption, although some inconsistencies exist across studies.

Impact on Gut Microbiota and Child Development

Pregnancy naturally alters gut microbiota, which is essential for metabolic and fetal development. However, diets high in UPFs may disrupt these microbial communities and lead to adverse health effects. Compounds commonly found in UPFs could influence microbial metabolism, intestinal health, and inflammation, impacting both maternal and infant health.

Infant exposure to UPFs can occur early in life, with some baby products classified as ultra-processed. Breastfeeding, recommended by the World Health Organization, is crucial for establishing a healthy gut microbiota, yet factors such as limited maternal education and aggressive food marketing can increase infants’ UPF intake. Studies note associations between early UPF exposure and childhood obesity, poor lipid profiles, and food allergies.

Proposed Biopsychosocial Pathway

The review authors propose a biopsychosocial model illustrating the interplay between UPF consumption and health outcomes. Biologically, consuming UPFs may alter gut health and increase inflammation. Psychologically, maternal stress and depressive symptoms may drive unhealthy eating patterns. Socially, disparities and marketing practices can exacerbate reliance on less nutritious food options.

This conceptual framework suggests that the relationships between UPFs and health outcomes are complex and influenced by various factors. While the findings support promoting healthier dietary choices, further longitudinal research is necessary to fully understand these relationships.
