Development of Master Chef: A curriculum to promote nutrition and mindful eating among college students

This research investigates the potential of a multifaceted approach to enhance diet quality among undergraduates, emphasizing the incorporation of nutrition education, mindful eating, and culinary skill-building. The primary objectives were to review the development of the Master Chef mindful eating curriculum and to evaluate its feasibility through expert feedback. Expert reviewers (N = 7), recruited from an online mindful eating course, provided insights via a combination of Likert-scale and open-ended survey questions. Quantitative data were analyzed using descriptive statistics, while qualitative responses underwent inductive thematic analysis conducted by two independent researchers. The findings indicate that the Master Chef curriculum was rated highly for feasibility and received overall positive feedback. However, reviewers suggested enhancing the program’s mindfulness component. Ultimately, the Master Chef curriculum is deemed a viable initiative for promoting healthier behaviors among college students. Future dissemination and analysis of the pilot are essential to determine the program’s effectiveness in supporting disease prevention among this demographic.
