Factors that influence the perceived healthiness of food—review
Consumers are interested in eating healthy food, while food manufacturers aim to ensure consumers easily recognize their “healthier” products on store shelves to meet their demands. Understanding the elements that impact how customers perceive the healthiness of food goods is vital for both parties. What makes consumers view one product as healthier than another? What makes consumers view one product as healthier than another? Over recent years, many studies have explored the factors influencing consumer perception of food healthiness. Plasek, Lakner & Temesi’s (2020) analysis reviewed 59 articles published between January 1, 2014, and March 31, 2019, using sources like Science Direct, Wiley Online Library, MDPI, and Emerald Insight. The study identified six key factors influencing consumer perception: communicated information (such as FoP labels and health claims), product category, packaging shape and color, product ingredients, organic origin, and sensory attributes like taste.
